The cake recipe is from Cynthia Lair's Feeding the Whole Family- it's one of my all time favorite cookbooks. As I understand it from copyright issues I can post the ingredients, but have to word the directions myself.
1 1/2 c unbleached white flour
1/2 c whole wheat pastry flour
1 teas baking powder
1 teas baking soda
1/2 teas salt
1 1/2 c cooked millet
1 c orange juice
1/2 c water
1/3 c veg oil
1/2 c maple syrup
2 teas vanilla
2 eggs, separated.
Oven temp 350F. Lightly oil and flour your pans. Sift together dry ingredients. Blend millet and orange juice in blender till smooth. And the water, oil, and maple syrup to blender, blend a little bit, then add just the egg yolks. Add the wet ingredients to the dry and mix well. Whip the egg whites till soft peaks form, then gently blend into the batter. Pour into pans and bake for 30-40 minutes. The cake will start to pull away from the side of the pan, or test with a toothpick. Cool a bit before you try to remove the cake from the pan too.
This cake has a slightly orange flavor from the juice, and a slight amaranth flavor, and is a pretty yellow color. I made this for my own dd on her first birthday- 10 years ago!
