Cake recipe for 1st birthday?

My little one will be turning 1 at the end of the month. I'd like to bake her a vegan cake. I know there are oodles of cake recipes out there but I'd prefer one that is low to no sugar as well. I've found an apple spice cake recipe but I was thinking of something more traditional...that one reminds me of a bread. Not nearly as fun. Thanks!

carrot cake or banana bread! carrot cake is a fav of mine (How It All Vegan has a good recipe) for kid bdays because i can pretend it's healthy if i fit a whole carrot in :-)

Well her first party is tomorrow. I have a carrot cake in the oven. I found a recipe that uses 1/3 cup maple syrup for the sweetener. I replaced the yogurt with coconut yogurt and used ener-g egg replacer instead of eggs. It has 4 carrots and almost 2 cups crushed pineapple. I'm bummed though bc I bought vegan cream cheese to make a sugar free cream cheese frosting but I messed up and got the kind with chives and herbs and no matter what I did it tastes like chip dip, not frosting. So I had to do a banana glaze...which has 2 cups powdered sugar. So much for sugar free. But at least it's still vegan. It was either that or use real cream cheese. I hope she likes it!

That sounds tasty! Happy Birthday to your little one.

I was going to suggest Cynthia Lair's recipe for "Gracie's Yellow Birthday Cake". I've made it a few times, it does call for eggs, but I have subbed flax or ener*g for the eggs.

Saphire - could you please post the recipe? Makenna's big birthday party is coming up next weekend. I want to order something but it's looking like it might be too expensive for all the people we're having so I may end up making another cake. Hopefully this one turns out better than the last! The carrot cake was too dense for her two teeth to bite off pieces.

I made my DD a carrot cake for her 1st b-day. She loved it.

The cake recipe is from Cynthia Lair's Feeding the Whole Family- it's one of my all time favorite cookbooks. As I understand it from copyright issues I can post the ingredients, but have to word the directions myself.
1 1/2 c unbleached white flour
1/2 c whole wheat pastry flour
1 teas baking powder
1 teas baking soda
1/2 teas salt
1 1/2 c cooked millet
1 c orange juice
1/2 c water
1/3 c veg oil
1/2 c maple syrup
2 teas vanilla
2 eggs, separated.

Oven temp 350F. Lightly oil and flour your pans. Sift together dry ingredients. Blend millet and orange juice in blender till smooth. And the water, oil, and maple syrup to blender, blend a little bit, then add just the egg yolks. Add the wet ingredients to the dry and mix well. Whip the egg whites till soft peaks form, then gently blend into the batter. Pour into pans and bake for 30-40 minutes. The cake will start to pull away from the side of the pan, or test with a toothpick. Cool a bit before you try to remove the cake from the pan too.

This cake has a slightly orange flavor from the juice, and a slight amaranth flavor, and is a pretty yellow color. I made this for my own dd on her first birthday- 10 years ago!
