cabbage potato and carrot soup

1 lb keilbasa sausage (low fat or turkey is fine)
about 1/2 lb carrots peeled and chopped
about 4-6 potatoes with peel still on and chopped
1 head cabbage chopped
salt, fresh/coarse ground pepper

cut sausage lenthwise and then in half circles. Brown in a large pot on medium until the bottom of pot is coated. Add water and deglaze pot, then add carrots and potatoes. Add more water until the veggies are covered, turn up heat, and boil until veggies are just getting soft. Add cabbage, stir to mix and cook until just tender. Add salt and pepper to taste. It's even better as leftovers

This is seriously the favortie meal in our house!!

I made something like this last week. I sauteed onions and garlic in bacon grease and added the cabbage. Added salt, pepper, and caraway seeds and bit of sugar. I cooked til soft and sort caramelized and then added crumbled bacon. MMMMMMMMMM!!

And BIEROCKS are awesome! They are like calzones w/cabbage and ground meat, carrots, onion, celery, bell pepper, caraway seeds, salt, pepper, and worsterchire (I know I butchered that, but I give up, and don't feel like looking in the kitchen) sauce. MMMMMM!

I love this simple cabbage soup. I got the link from a mama on this board.

Healing Cabbage Soup


I modify the recipe slightly -- this is my version:

* 3 tablespoons refined coconut oil
* 1/2 onion, chopped
* 5 (or more!) cloves garlic, chopped
* 2 quarts stock
* 1 teaspoon salt, or to taste
* 1/2 teaspoon black pepper, or to taste
* 1/2 head cabbage, cored and coarsely chopped
* 1 can tomatoes

In a large stockpot, heat olive oil over medium heat. Stir in onion and garlic; cook until onion is transparent, about 5 minutes. Stir in stock, salt, and pepper. Bring to a boil, then stir in cabbage. Simmer until cabbage wilts, about 10 minutes. Stir in tomatoes. Return to a boil, then simmer 15 to 30 minutes, stirring often.

yum, I put it my soup, it goes great with tomatoes . also ( letting my polish out) you can make piggies in a blanket. I make it vegetarian. I love it.

It looks to me like this recipe makes a LOT, you may want to halve it so you don't end up with too much if your family doesn't like them. I like them although dd2 and dh DON'T.

My SIL makes these with her ILs recipe, I think it has egg in it (the dough). It definitely has more stuff in it (seasonings and things) than this recipe.

My favorite cole slaw recipe is from the Butte Heritage Cookbook.
1 tsp salt
1/4 tsp pepper
1/2 tsp dry mustard (I've used regular when I haven't had dry on hand)
1 tsp celery salt (I usually use celery seed, about 1/2 tsp)
2 Tbsp sugar
1 tsp grated onion
3 Tbsp. oil
1/3 cup vinegar
3 cups chopped green cabbage
1/4 cup chopped green pepper (optional)

Put in bowl in order listed, toss, chill, serve - makes four generous servings.

I loathe the mayo-based cole slaws, but this is good; and it's the reason that dd1 realized she likes cabbage. We were just talking tonight about how it would be nice to have cole slaw again.
