Whenever I make muffins, I will make a double batch - one to eat and one to freeze. Mixing a double batch takes hardly any more time than mixing two. (Baking will take longer, since I have just one set of muffin tins.)

I was getting discouraged by watching all the muffins vanish within two hours of coming out of the oven!

OK, that's my intention. Wish me luck.
