Soaked flour for bread went grey?? is this normal?

Hi - I am new to this thread Just wondering if this is normal?? ................. I am Following Sue Gregg's recipe for soaked flour bread. I've made it several times before , but this time I added a bit of amaranth flour, and some ground oats , along with spelt and whole wheat flour that I usually put in. This morning I check on it, and I noticed that the top of the dough was a bit grey tinged, due to lots of dark flecks scattered around.... looked like some of the mealier pieces had become darker. Underneith it is a consistant and "normal" colour. The recipe does say to put plastic wrap directly on the dough.... perhaps mine wasn't very tight and air got in? could it be because of the amaranth and oats? ( they are new additions to the recipe for me) It smells good, and it's only been sitting out for about 12 hours. It's pretty cold where I am at the moment, so I set my oven for 100deg. and put the bowl on top of the stove near where the vent with warm air comes out. Never done this before either. Anyway- I have kids coming over soon to bake bread with us and I don't want to poison anyone!! Thanks for the help!!

It seomtimes turns a bit dull on the top but it's just fine
