I've been craving creamy veggie pot pie. What's your fave vegan recipes?

I always makethis pot pie from Attila the Honey. I've gone to the trouble of frying up the tofu first like the recipe says, and the tofu's fabulous that way, but I don't think it really makes much difference to the finished pot pie, so I skip that step now and just use plain cubed tofu. (I do still fry tofu kind of like that to eat by itself sometimes, though!) This is by far my favorite pot pie, and without the fried tofu, it's really easy. Everyone who tries it says it tastes like the pot pies of their childhood (in a good way).

Rainyday: What crust recipe do you use? I plan to make the recipe you linked but it doesn't have a crust. I want to do a top and a bottom. I guess I might do vegandad's crust and multiply it by 2?

I just use the basic pie crust from Joy of Cooking:
2 cups flour
1 teaspoon salt
2/3 cup plus 2 tablespoon shortening
Whir in food processor (or cut with pastry blender). Blend with water (recipe says 4 tablespoons, but I find it always needs more)

I think any crust would work, though!

I made the recipe Raindyday posted for dinner tonight. It turned out fantastic! My husband proclaimed it the best vegan dish he'd ever had. And the best pot pie he'd ever had. He said he forgot it wasn't chicken. Yummy!!!

From Veganomicon I love leek and bean cassoulet (sp?) and the cauliflower pot pie with black olive crust.
