The stew I had planned for dinner fell through (forgot to soak dry beans, thought I had a can as backup but didn't), and I realized that if I took a short walk to the store for one ingredient, I could make the recipe on the opposite page in the cookbook :P So I ended up making Mohadra, it's lentils and rice topped with caramelized onions (seasoned with cumin, coriander, and a pinch of cayenne), garnished with dilled yogurt. It had great layers of flavor, especially since the seasoning was in the onions and the natural deliciousness of the lentils and rice was allowed to come out with just a little salt. Definitely umami!!

The way I did it was I made a base with butter and flour, then whisked in the broth and let it simmer a few minutes to thicken, then added about half a cup of chopped dill (frozen, but I'm sure dried would work too, just less) and a squeeze of lemon plus salt and pepper. Then I added the leftover meat and veggies in small pieces. I can't believe how easy it was and it was super delicious.

mm excellent! I now have extra dill I will need to use up this week! Maybe I should try freezing the rest. Thank you for the ideas, as always
