Fav recipes for leftovers!

So what do you LOVE to do with your leftovers? I "remake" my leftovers all the time..

I REALLY like doing this.. 1) it seriously cuts down on my cooking time 2) I have less chance of wasting food

meatloaf from Tuesday goes into spaghetti sauce on Wednesday
burgers go into the pot of chili
baked chicken goes into alfredo pasta (cubed chicken) or chicken noodle soup or curry with pineapples or Tom Ka Gai
baked salmon goes into salmon spread (great for parties!)
enchiladas or jambalaya are made into Mexican tortilla soup
chopped veggies go into ranch pasta salad with bacon
leftover ham gets chopped for omelettes (also dp makes a hambone and bokchoy soup)
turkey goes into turkey soup or turkey salad with dried cranberries and celery


and so on.. but I am sure there are lots I am not doing! So what do you do?
Pot pies? Shepherd's pies? something entirely I hadn't thought of?

Roast mixed vegetables (red pepper, zucchini, onion, garlic, carrot, sweet potato) for a side dish one night. The next night, re-heat in a saute pan in olive oil with some fresh herbs) and use as a pasta sauce. Or use as the base of a soup - reheat, puree and add chicken stock and (optional) a little milk or cream.

I'm not great at this, other than making a roast chicken into stock, and then either "chicken a la king" or chicken salad sandwiches.

I tend to reuse small amounts of meat in a quesadilla.

I rarely morph my leftovers into something else. If it's something that I make a large quantity of, we'll either eat it the next day for lunch or supper or I'll freeze for supper at a later date.

The only thing I do this with is a large piece of meat. Ham becomes ham and beans or ham and bacon quiche. Turkey becomes Turkey Tetrazzini, turkey salad, turkey croquettes... same for chicken except we do a lot of chicken and noodles (not soup) and of course, the carcass or bone is used for stock.

If we want leftovers, really, I just double recipes (unless they are big already) and feed the freezer with half. That's the basis of my leftover game plan. So I don't really have any good ideas except that leftovers don't have to be eaten in some other form the next day... you can actually, usually, freeze some and have it at a much later date.

I love planned overs!!! I agree that it cuts down on waste and keeps things interesting. I don't like warmed up dinner from the night before, but transform it into something new and interesting and I'm all over it!!!

Meatballs become italian wedding soup, meatball casserole and tons of other things before I was grain free!!!

Chicken has a million different ways to be used.

Usually I can make two meals and a soup out of one original meal.

And I owe it all to the wise mama's on MDC.

Meatballs in soup and then I use them for meat in lasagna (yum!)

I love this stuff!
  • chicken, beef, pork, fish - any type of meat really, often shows up in tacos within the next week or so
  • I will often use cooked veggies tossed with pasta
  • I usually cook extra bacon and freeze it to use for chowder or fritatta
  • Sunday's pancakes are made into sandwiches for Monday's packed lunches
hmmm, I will think on it and see if there's anything else!

I just made meatloaf quesadillas last night. Had some leftover meatloaf, chopped it, added it along with some cilantro and cumin and chili powder and cheese to tortillas and grilled them. I served it with a cilantro sour cream and fresh avocado. So yummy!
