I would like to know, too! I had planned on doing some GF baking but bailed when I realized how many different extra ingredients I would need to purchase. So I have rice flour just taking up space, no tapioca or other flowers and no leaveners other than the usual stuff- yeast, baking powder. So... what to do?

Rice flour on its own doesn't work very well in most recipes, sorry to say.
This is a great rice flour based recipe ... use 1:1 in most any recipe for great results. It's worth searching out the ingredients.

ALL PURPOSE GLUTEN-FREE FLOUR
2 1/2 C brown rice flour
2 C white rice flour
1/2 C corn starch
3/4 C potato starch
3/4 C tapioca flour or starch
3 tbs xanthan gum

I use rice flour but not much. I use sorghum flour more often, along with sweet potato flour/starch and tapioca starch. And buckwheat flour. Rice flour is very gritty to me (and my DS hasn't been able to have it for the last 18 months, he's just getting rice back on rotation). There are also different types of rice flour: rice flour, brown rice flour, sweet rice flour, and glutinous rice flour.
