Butter Usage

Of course, I LOVE butter. Who doesn't? In the past, when I've really wanted some, I'd usually smear a thick layer on a piece of toast and enjoy. Well, I'm by no means grain-free, but I've cut WAY back on my grain intake and am not keeping bread around these days. So how do I get my butter fix now? I need some ideas! I still cook with it, of course, but it's not quite enough. I butter my veggies, but most of my veggies are being consumed in some sort of soup form these days (pregnancy preferences, you know!). I'm really not interested in trying to create bread from coconut flour or nuts or anything, and I don't miss bread for any reason other than its ability to carry butter to my mouth! Everyone here is so creative, TIA for any of your thoughts!

My favourite would be baked potatoes, cooked in the oven on a low heat for a long time.

umm...have you tried it by itself? Just a small slice off a cold chunk? It's divine, imo.

I melt some on a baked sweet potato, including the skin. Yum.

Potatoes. Love them in any way, slathered with butter, but my favorite is raw-fried with lots of butter, onions, and sweet peppers.

I drench my scrambled eggs in butter!!!

I know you said no nut flours, but my coconut flour blueberry muffins are really divine little butter transportation devices!

My dh likes to make us chive garlic butter and stick a (ehem, large) dollop on top of a grilled steak. OMG so good!!!

I love a banana spread with peanut butter and butter. Used to eat sandwiches with that but we almost never have bread in the house. *shrugs* its faster and just as tasty without the bread. (I use a pat of butter, a dolap of pb, a banana and a spoon, spread them both on a bite, eat, repeat)

I second the spiced butter on a steak idea! Sooo delicious and the flavors are infinitely variable depending on what you add.

You mentioned soup... when I make soup I almost always use (lots of) butter to sautee the onions/veggies in before I add water. Or if your soup isn't very fatty (pea soup for example) you can just stir in a big chunk before serving.

Cabbage and potatoes are both delicious fried in butter, and you need LOTS of butter for that because they seem to absorb it.

My mom always used to make this dish that was salmon baked and then broiled with ground sesame seeds, salt and pepper, and pats of butter on top. So crunchy and buttery and delicious.

Have you tried buttering slices of cheese? Cheese with butter and jam is delightful.

i second the butter on cheese idea! I looove slices of raw hard cheese spread with a thick layer of smooth, creamy slightly salted butter!

Is it seriously possible to lack butter carrying devices? I had no idea...

I am preparing a cream of mushroom soup from moose bone broth and I started it with 1/4 lb of butter (I would use more if there wasn't 4 cups of cream in it).

Do you like sauces? You could make lots of different ones with lots of butter. I make a ridiculously cheesy, buttery sauce that would be delicious on spaghetti squash or other veggies.

Do you like applse sauce? My boys are just finishing up cutting up 3 lbs of apples to bake, add cinnamon, and then once done, puree with cream, raw honey, lots of butter and a pinch of salt. Mmmmmmm.....

I don't think I eat much of anything without butter. I do eat oats and some wheat though, which obviously makes it easier to stuff all that butter in.

I can't think of anything else; butter is just so ubiquitous over here!

Thanks for all the great ideas. After thinking about it some more, I think what I'm really missing is that sensation of biting into a slice of cold butter on top of bread or toast. I'll definitely have to try just plain ol' slices of butter, as well as the buttered cheese idea! I think I do a pretty good job of cooking with butter, and don't think I'm eating too little, I think it's just that one particular mouth-sensation I'm looking for. As much as I love butter in and melted on stuff, I sometimes crave biting in to it! Anyone know what I mean, or is this just a quirky pregnancy thing?

I totally know what you mean. My dc eat it by the spoonful and insist that it be cold too. You are not alone, mama.

I guess I don't really understand why so many people are becoming 100% grain free. I eat about 2 slices of Ezekiel sprouted grain toast with gobs of raw butter on them every day, and occasionally, buttered brown rice or quinoa. I personally feel amazing allowing my body these few grains a day (good protein and B vitamins!). I don't think it's grains, but gluten, that people should really be avoiding. So anyway, my thinking is, if you aren't sensitive to it, eat your toast with butter daily! Just maybe choose the sprouted brands!

You can do coconut flour and/or almond flour bread/muffin/cake type stuff and put butter on those. Mashed cauliflower with lots of butter is yummy. Last month, I was 100% grain-free for over 3 weeks and those were my favorite, buttery comfort-type foods. I never thought that I'd be better off grain-free, but we witnessed that grains caused me to be have gas and be bloated (which I would have never known otherwise), since we noticed on the 12th day of being grain-free that my stomach became flat and I could fit into a tight pair of jeans that I couldn't wear since pre-pregnancy, and I barely had gas anymore.

I totally know what you mean! I hope we'll never have to cut out bread mostly because of this actually.
