sugar free muffin recipe

Thread Starter
Does anyone have a really good recipe for muffins that has not refined sugar? I don't want to use any artificial sweeteners either, so would be looking for something fruit sweetened or date sugar/maple sugar, etc. If anyone has one they like, please post. I am trying to eliminate sugar and it helps to have a few healthy snacks already prepared around the house! Thanks

Banana Chocolate Chip Muffins

Is honey OK? These are our favourites. (You can leave out the chocolate chips, or substitute raisins instead.

1 1/2 cups/375 mL whole wheat flour

1 cup/250 mL rolled oats

2 tsp/10 mL baking powder

1 tsp/5 mL baking soda

1/2 tsp/2 mL salt

2 eggs

1/4 cup/60 mL cooking oil

1/4 cup/60 mL honey

1/4 cup/60 mL milk

3 medium bananas, mashed

1/2 cup/125 mL chocolate chips (optional)

Preheat oven to 400F/200 C.
Get out your muffin pans. (I make 12 regular sized muffins and 12 mini-muffins with this recipe.) Grease the muffin pan(s), or get out the paper cupcake liners. This recipe makes enough for 12 regular sized muffins and 12 mini muffins.

In a large bowl, put the flour, oats, baking powder, baking soda and salt. Mix. Make a well in the middle.
In a small bowl, beat the eggs until they are frothy. Add the oil, honey, milk and bananas. Mix thoroughly.
Pour the banana mixture into the well in the middle of the dry ingredients. Stir just enough to moisten it all. (Stop! Don't overmix! The secret of making perfect muffins lies in the stirring. It's okay if there are still some flecks of flour visible. The batter will be lumpy - that's fine! Resist the urge to keep stirring!)
Fill your muffin cups about 3/4 full.
Bake for about 20 minutes, or until a toothpick inserted in a muffin comes out clean.

Pumpkin muffins

1 1/2 cups/375 mL whole wheat flour

1 tsp/5 mL baking powder

1 tsp/5 mL baking soda

1/2 tsp/2 mL salt

1/2 tsp/2 mL cinnamon

1/2 tsp/2 mL ground nutmeg

1/2 tsp/2 mL ground ginger

1/2 cup/125 mL raisins

1 egg

1/4 cup/60 mL oil

1/4 cup/60 mL milk

2 Tbsp/30 mL honey

1 cup/250 mL cooked pumpkin

Preheat oven to 400F/200C.
Grease your muffin tins, or get out the paper muffin baking cups.

In a large mixing bowl combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger and raisins. Stir with a fork to mix well. Make a "well" in the center.
In a small bowl, beat the egg until frothy. Add the oil, milk, honey and pumpkin. Stir well.
Pour the liquid mixture into the "well". Stir briefly, just enough to moisten most of the dry ingredients. (It's OK if you still see flecks of flour. Don't overmix!)
Fill the muffin tins.
Bake for about 20 minutes, or until a toothpick inserted into a muffin comes out clean.
