EC in cold climates?

I'm going to be moving to North Carolina early this spring, and I understand it can still be pretty chilly that time of year. What is the best system for EC? I'll be outdoors much of the time and don't want DS to have freezing cold legs/tush. I use legwarmers a lot right now, but I don't think they're thick enough and am considering buying some split crotch pants and using them with the legwarmers, maybe putting a prefold in there for extra protection. Does anyone use them with success? I was thinking maybe wool, but am curious--is it true about wool that you can let it dry and use it again?

I don't know how cold NC is but the wool thing is true.

It rarely gets really soaked but if you squeeze it dry in a towel then hang it to dry you are good to go again in next to no time.
