Eating raw for two meals?

I'd like to eat at least two meals of my day raw if possible, but I'm not sure where to begin, what to do, which meals would be most beneficial. I've checked out a few web sites and books, but they seem to be more involved than where I'm hoping to start out. Right now, I eat :

Breakfast: Coffee and a big bowl of oatmeal or oat bran with fruit and almond butter
Lunch: Big salad and iced tea
Dinner: Usually bean-based with rice/tortillas/potatoes/some starch, sometimes wine but generally more tea and water
Snacks: Fruit with peanut butter, crackers and hummus

When would be the healthiest time to do the cooked meal? I still plan to cook meals for my family, so I probably would go for easy meals like fruit or vegetable salads for myself. Our blender isn't really up to par, either, so smoothies can be pretty chunky.
