within less than 48 hours?!?!?!? What could have caused this to happen so quickly? I even stored them in the fridge, so this makes no sense. Anyone experienced this before?

That is strange. Were they scratch or box mix? I've had two "boxes" of vegetarian pudding go green on me the morning after they were made - but none of my other food.
At my parents house in sunny San Diego, you leave anything out with water/food in it (ie oatmeal) and it has green scum on top in the morning.

They were scratch. They were the sexy low fat vanilla cupcakes from vegan cupcakes take over the world. I topped them with raspberry jam and homemade buttercream frosting. The flour was new, the jam was new and the powdered sugar was new, so I don't really think it was the ingredients. I placed them in the fridge after they were frosted, so the only thing I can think of might be that the container might have had a few invisible spores left over from something else and it quickly spread.

Sometimes it's the environment. In our old apartment in the Bronx, everything went moldy very quickly. It helped quite a bit when we got a new refrigerator. I think our old fridge had just been terminally colonized by mold spores. We still had the issue a bit though, I suspect it was from the supermarket dumpster our kitchen window overlooked.
