Save the soaking water? YAY or NAY?

I can't believe I still havent figured this out.

Soaking beans- Save the soaking water?

Soaking grains?

Soaking nuts and seeds? (or should these be separate?)

Yes! (for rice anyway.)

Try this method.

It does give the rice a bit more of a sour/cultured taste, which I don't mind.

"save" as in "use to cook the legume/grain/other" or "save" as in "save to inoculate future batches, but cook in fresh water" ?

I cook in fresh water (or stock), but I'm going to start using the method avendesora linked for grains or legumes we consume. Seems like it should work just as well for lentils as for brown rice (her link, I love that blog) and I've been adding lentils (yummy French green lentils that don't taste lentil-y) to our diet lately.
