So, I am taking a nutrition class this semester

and the stuff they have in this book is pure crap(excuse my language).

It is all about eating lowfat and consuming tons of grains. I can't believe I have to sit thru a semester of this .

There is a table where they compare a glass of whole fat milk and a glass of low fat milk and they said the lowfat milk is more nutrient dense?!? What in the world, how is that even possible? It has double the calcium of the whole milk--are they just talking about added vitamins here?

Well, once fat is removed nutrients that aren't bound to fat (calcium, in this example) are concentrated in what is compared to an equivalent volume of whole milk. Cup for cup, skim has more calcium. It's not double though.

Heehee, my mom took a college nutrition course and I read the textbook too because I'm a nerd and I totally know what you mean. I especially love the section on prenatal nutrition...

Consider that when you take calcium... even eat it.. you need a balance of magnesium. It doesn't matter if low fat milk is more nutrient dense because you can only absorb so much.

Secondly they already did a study showing that women who ate whole milk products as opposed to low fat milk products were more fertile. Fertility is one of the best indicators of health.

LOL that explains SOOO much! I'm going on skim milk and fat-free dairy right away (kidding...).

It drives me crazy when nutritionists are guests on radio shows (I'm a die hard radio listener). Fat=bad, carbs=good...way too simplistic and even plain wrong.

Skimmed milk does have more calcium than full milk because the fat doesn't add calcium. However, 50% of the calcium is absorbed from full milk, only 25% is absorbed from semi-skimmed, and 5% from skimmed milk. Absorption is even less if eaten with bran-laden cereal. I just read this in the book Trick and Treat.

I would love to pursue a career in nutrition, but would hate to have to sit through classes of this crap also!!
