Ta-Da! Scrapple Cake!!

Dd2 requested a "scrapple cake" for her birthday ~ she's 7 today.

Pics:

The "cake", all decked out.

Drizzled with maple syrup ~ a little slice of heaven.

It cut really well!

I thawed out 2 lbs of scrapple (it's GF, made with just buckwheat).
I heavily greased a large cast iron skillet with bacon grease, pressed scrapple firmly into skillet, rubbed some grease on top & baked it for somewhere around an hour - 1.5 hours - I just kept looking at it.

To serve it, I just cut it like a pie/cake & drizzled it with maple syrup!

I can't find scrapple around here, but seriously considering making some when we butcher pigs in a couple of months!

I want scrapple!!!!!! I'm seriously pouting over here... this isn't the first time you've mentioned it, and I live nowhere near scrapple-rific PA. We have a LOT of German-ancestry farm towns around, though... wonder if they'd know what it is?

Your kids are seriously omnivorous... so cool.

What cracks me up is that she never even asked for a sweet, dessert-y cake.

The idea came about one day when we were fantasizing about our favorite foods (butter, bacon & scrapple) & talking about in what extravagant ways (& quantities) we would eat them. Somehow birthdays kind of meshed in with the favorite foods & the scrapple cake was born.

It was really delicious! I was afraid that the inside would be really super mushy, but it turned out perfectly. Once it was in the oven, I had no idea how long it would take to cook to our liking, so I just kept poking the center of it. When i finally took it out, it was still a little mushy in the center, but once it stood for a little while, it firmed up beautifully.
The edges, top & bottom had a lovely, crisp crust while the center was still somewhat soft ~ just the way we like our scrapple. I suppose the drizzle of maple syrup made it somewhat dessert-y.

I have just enough scrapple left to make the same cake for Dd1 in less than 3 weeks & for Ds in March.

I was actually thinking of attempting to make some kind of scrapple-upside-down cake, but I can't think of anything to put on the bottom...

Bacon?

I just discovered beef bacon, and I LOVE it. It's all I ordered next week from my winter co-op. I've never had scrapple, so I don't know if it'd work or not.

I just recently heard about beef bacon. It's made from the brisket, which makes total sense to me. I heard it is to die for!!!! Wonder where I could find some?????

Yeeeah, bacon! Maybe chopped into small pieces...

I *just* heard about beef scrapple about 3 hours ago at my chiropractor! How funny! I can ask where the lady gets it ~ but I don't know if it'll be from a happy cow.

Somehow I thought you might the idea of bacon. Let me know about the beef scrapple. How funny!

We ate all the beef bacon immediately and I'd eat it all day if I could!

Ours if grain-free. It's made with just buckwheat, salt & pepper. The farm we get it from is in Kutztown, PA. And it's a happy-animal farm.
