Need a vegan french toast recipe

I've successfully made vegan pancakes that the kiddos devour... but haven't had any luck finding a good vegan french toast recipe. You rockin' vegan moms MUST have the secret... could you share? My DD would so appreciate it!

The one I make uses:

2 very ripe bananas
1 1/2 cup of coconut, rice, or soy milk
2 tablespoons corn starch
1 tsp vanilla

Blend in food processor until smooth. Lay slices of bread on a cookie sheet that has raised sides (I use the most styrofoamy looking gluten/dairy/egg free bread I can find in the store since we are also g/f...it's not good for eating but it sure does work well in this recipe). Pour half of the banana mixture on the cookie sheet and lay the bread slices on top of it in a single layer. Then cover the bread with the rest of the mixture. After the bread is soaked (10-20 minutes, depending on the bread), cook on greased griddle.

The rest of the recipe is option but it's based on a Brazillian holiday breakfast recipe. Put vegan butter or coconut oil on the french toast when it's done cooking, and top with real maple syrup. Sprinkle with cinnamon and cocoa powder.

I just made some last weekend to use up some leftover Silk Nog. But you can use regular non-dairy milk too.

1 c. vanilla non-dairy milk of your choice, or nog (or you can use plain milk and add a little bit of vanilla extract)
2 T flour
1 T nutritional yeast (sounded strange to me, but tasted good!)
1 T Sucanat or other sweetener (not needed if you use the nog)
1 t cinnamon
4 slices bread (I found I had enough batter for at least 6-8 slices)

Whisk first five ingredients together, and let rest for a few min., while you heat up a lightly greased skillet. The skillet is ready when you flick a drop of water on it, and it skitters across the surface.

Dip bread slices in mixture, coating both sides, and lay on skillet. Flip the toast when it is lightly browned & brown other side. Serve with maple syrup & cinnamon YUM!!

I use a variant on the recipe in VWAV-

1 cup vanilla soymilk
2 tablespoons corn starch

Whisk that together until completely dissolved and then add

1/4 cup chickpea flour

Stir in, some clumps are ok.

I use the Cinnamon raisin buns from TJ's as my bread and it is great.

The first milennium cookbook has an incredible vegan french toast - using applesauce and ground flaxseed. I'll try to remember to dig out the cookbook.

Best french toast ever.

Loaf of Italian or French bread, baguette shaped, preferably stale
1/2 cup soy creamer (rice or soy milk would make a good substitute, preferably rice)
1/2 cup rice milk or plain soy milk
2 tablespoons corn starch
1/4 cup chickpea flower
Several tablespoons canola or vegetable oil

I got so excited when I saw this thread because I was going to suggest this recipe! But you beat me to it!

Seriously, this is the best French toast ever. It's delicious!
