Your top family pleasing recipes please!

Full recipes or links to sites with the recipe needed! I like to try at least 2 new recipes a month and for next month I'm stumped. Nothing I've found in searches online looks good...we can be a bit picky when it comes to fruits and veggies. It needs to be fairly easy...i"m a good cook (if I do say so myself) but I'm no Emeril. Oh, and we can't do dairy unless it's raw...the only thing we can't get is cheese variety. So, if your recipe comes slathered in cheddar or something it's a no go around here...

Here's our new favorite fish recipe

Preheat broiler.

1 jar (8 oz/225 g) pickled ginger

2 limes

8 fish fillets, each about 5 oz/150 g.

Juice the limes. Process the lime juice and the ginger (with juice) in the blender. Place the fish on a broiler pan. Spoon the sauce over the fish. Broil for about 12-15 minutes, or until the fish flakes easily with a fork.

...and our favorite pork chop recipe

My 7 year old (who is our pickiest eater) would eat this daily if he could!


Preheat oven to 350F/175C.

6 thick pork chops

1/2 cup/125 mL chopped onion

1/2 cup/125 mL maple syrup

2 Tbsp/30 mL cider vinegar

2 Tbsp/30 mL Worchestershire sauce

1 tsp/5 mL chili powder

1/2 tsp/2 mL salt

1/4 tsp/1 mL pepper

Place the pork chops in a baking pan or baking dish.
Combine the remaining ingredients. Pour over pork chops.
Bake for about an hour, until no longer pink inside.

...and a really nice chicken recipe.

Unfortunately, dh is now allergic to coconut so we can't have this one any more.

Preheat oven to 350F/175C.

1/4 cup/60 ml melted butter
2 lbs/1 kg chicken pieces
1/2 cup/125 mL flaked unsweetened coconut
1/4 cup/60 mL fine bread crumbs

Brush the chicken pieces with melted butter.
In a shallow bowl, stir together the coconut and the bread crumbs.
Roll the chicken pieces in the coconut mixture.
Place the chicken in a baking pan.
Drizzle any remaining butter over the chicken.
Bake for about an hour, or until no longer pink inside.

This ia huge favorite on our house

Pound boneless/skinless chicken breasts thin

Layer chicken breast with baby spinach and gorgonzola (goat works well too or even mozzarella for a much mider flavor)

Roll breasts up and secure with toothpicks

roll in flour

preheat skillet, add oil and brown chicken on all sides

Add wine, both or water

Cover and cook until chicken is cooked thru, remove chicken from skillet

Reduce liquid until slightly thick and pour over top

Another crowd pleaser when my son has friend over

cut chicken breast into strips. Also works with thicker cuts of codfish

mix panko, paprika, S&P together

Beat a whole egg in small bowl

Roll chicken or fish in egg and then the panko mixture

Bake until crispy

serve with cut carrots and dip

( my husband loves this too!)

Lentils with rice

Of course the traditional recipe involves white rice and sautéing of the onions/garlic in olive oil but I always like to add the olive oil just before serving.

My husband might've married me for cabbage roll casserole, LOL! And it's so easy. You get all the flavor of cabbage rolls without all the hassle and work. You can even just throw all the ingredients in the crockpot in the morning and come home to a delicious hot comfort meal. (All the measurements are approximate; tweak at will.)

1 lb ground meat (beef, turkey, chicken, etc.)
1/2 onion, diced
Fresh garlic to taste, minced
1 small cabbage, chopped
2 or 3 carrots, diced (optional)
1 cup uncooked rice (or 1/2 c rice and 1/2 c barley)
Salt and pepper to taste
1 cup tomato sauce
2 cups broth

Throw everything into the crockpot as is, mix it up, turn it on. Or...

Preheat oven to 350 F. Brown meat in a skillet. When almost done, add onions and garlic, and keep cooking another minute or two. Drain fat off, if necessary, and return to pan. Add carrots and cabbage and cook a bit longer, stirring, until cabbage begins to wilt. Remove from heat and stir in everything else except broth. Pour into a casserole dish, spread evenly, and then pour the broth on top. Bake for 1 hour or until rice is tender. Serve in bowls and curl up on the sofa with your loved ones to eat it.

Oh yeah, the other one that both my husbands (ha) have raved about is eggplant stew.

Cut up a little onion and garlic and fry them up in a little olive oil. Peel and cube an eggplant and throw that in. Slice up a carrot and throw that in. Keep going with whatever veggies you think will be good. When it's all cooked nearly through, pour in some wine or broth to make a big steam cloud and stir it all into the veggies to absorb. At this point add some tomato sauce and season to taste with s&p, herbs, red pepper flakes, etc. Bring it all up to a boil and simmer it into a thick stew. Serve it over baked potatoes, rice, or polenta to soak up the sauce.

Roast Chicken with Potatoes and Arugula. The recipe is for one, but can be doubled, tripled, whatever, very easily. Very easy dish, great hit with everyone.
