Soak and Store?

I just soaked about 4 cups of Lentils over the past 12 hours, but don't want to use them yet... Can I store them in the fridge even after they've been soaked?

I don't see why not. I'd do it - the soaking helped to break down the lentils and it's not as if it's something activated (like yeast, baking soda, etc) that would cease with chilling.

No problem. The cold will slow fermentation so it doesn't get nasty, it will keep a while (a week+?) in the fridge

When I do this, the lentils tend to sprout in the fridge! Another added bonus.
