I made some brie stuffed chicken thighs that were AMAZING last week.

Debone the chicken thigh, but leave the skin on. Season skin side with salt and pepper.

Lay the thighs skin side down and season with salt, pepper, garlic powder etc. I layered a couple thin slices of ham on the chicken, then placed a chunk of brie, (I cut the wheel of brie into thick spears) and a couple pinches of chopped baby spinach on top. Either skewer the thighs, or close up and tie with butcher twine.

Bake at 350 for 20-30 min or until chicken is done.

Mmmmmmmmmmm...
