What can I do with this failed aioli?

DH tried to make aioli a few minutes ago, and instead of whisking in the olive oil bit by bit, he dumped it in all at once. It's just a runny mess.

So, what can I do with a jar half full of olive oil, raw egg yolk, and minced garlic? I am open to any ideas.

I just did the exact same thing, intentionally. I wanted to make a warm potato salad, where the mayo always melts anyway. I figured I didn't need to go to all the trouble to make it thick and fluffy. Made mine "italian style" with a lot of basil, and a big ole' raw diced onion. Just mix your add inns with your runny aioli and then toss in warm diced boiled potatoes, season to taste. It was divine!

If you have a stick blender you can make it nice and fluffy with that, I make mine this way. I just throw everything in a blend with the immersion blender for a few seconds.

Also maybe keep it for salad dressing? The potato idea sounds good though too!

Hey thanks, y'all!

I am going to try to remedy things with the stick blender, but if I can't, I will use it to dress some sort of salad. Thanks to both of you for the ideas!

Just make a new batch of aioli and incorporate the failed aioli at the end slowly, just like the oil.

That's what I was going to say....you can make another batch, or half a batch even and use the stick blender to start. That has happened to me wtih mayo before using the FP and not drizzling slow enough to start

Yes I agree, most likely the oil was not added slow enough whcih caused the aioli not to thicken properly. But once you get a good result you can add back the failed batch slowly like the oil. I've ditched store bought mayo & just make it now, it is all about the slow adding of the oil!
