I made the whole wheat brioche recipe from Healthy Bread in 5 Minutes a Day last week, substituting agave for honey, oil for the eggs, and Ener-G egg replacer for the eggs. It just didn't turn out quite right--it wasn't really fluffy and it didn't have the richness I wanted.
What egg replacer would you recommend as my next try? Ground flax seeds? Tofu? Or maybe more liquid with the Ener-G?
