Corn Tortillas?

I love them, but hubby doesn't. I would love to keep them in the house, but they aren't freezeable, that I can tell. But they dry out and get crumbly in the fridge. Any suggestions? Or do I make my own? Recipe?

When we were eating them, I would buy the Food for Life Sprouted Corn tortillas. I always kept them in the freezer. It never occurred to me not to Anyway, it worked just fine with them but they were on the thicker side so maybe that helps.

Hmm I will try it again. I thought when I tried to freeze them in the past they got all crumbly.

I just dampen them a bit before I cook them.

I buy the big bag from places that make their own and freeze some.

I always freeze them because, for the most part, we only use them in one dish. We do eat it frequently (or at least we used to) so I would break them in to smaller packages and freeze just enough to make enchiladas. I don't cook them before sticking them in the enchiladas though so it's not really a problem for us that they get crumbly.

To me its just easier to make my own most days I dont like them thawed and its funny dh likes them fresh made but not from a package.

I just leave them out. They stay good forever.

We live in St. Louis which can be humid. They would mold.

If I am making enchiladas I have noticed they are pretty hard to work with if they had been frozen so I tend to make those as more of a lasagna/layered type of thing. If I am using fresh I just roll as normal.

The Food for Life ones are fantastic and freeze wonderfully. They also store well in the fridge for about a week or so.

Where do they sell Food for Life ones? Trader Joes? Whole Foods?

Corn tortillas always used to fall apart on me (and I hated the taste growing up) because I didn't know they were not fully cooked . Once I learned to finish the cooking in a pan or even over a low flame, the taste improved and they held together better but then again, I have easy access to relatively fresh local-made tortillas here in Chicago. So if undercooking isn't your problem, perhaps trying to make your own would be the next thing to try.
