Sugar Beets?

I recently read an article on Forbes about anti-depression diets. A couple of the foods were your usual suggestions (walnuts/salmon/tofu), but they also suggested sugar beets and molasses (in moderation).

I am a very picky eater, but I would like to try to do something with the sugar beets... any ideas? I am open to a wide variety of recipes despite my picky eating, because I am still willing to try anything once!

Here beets are usually served as a side-dish: boil, peel and chop them up, add green onions, celery and lots of crushed garlic. Dress the dish up with extra-virgin olive oil, red-wine vinegar and sea salt.
This goes well with grilled (or fried) fish!

I adore beets--one of my favorite vegetables! I like them boiled, with butter. Roasted. Pickled. In harvard beets (my mother's specialty--sort of a thick sweet and sour sauce). On salads. As a side dish. In borscht.

Yum. Beets.
