suzywan - Thanks! I live in MI. Ordering mail-order meat is probably a good route to look into. We bought an eighth of a cow a while back and still have the cuts we don't like as much left in the bottom of the freezer. DH won't discuss buying more beef until we use up what we have. I will keep your suggestion in mind for when we do run out, though.

What about nut butters? I have heard about throwing a dollop of nut butter in smoothies. If you are using coconut milk or cream as a smoothie base, that would probably be really good. And it is harder for DHs to plow through a jar of nut butter.

ETA: I forgot my other suggestion. The weird cuts I defrost and grind. If they are lean cuts you might have to mix in extra fat when you make your recipe, but this is how I get rid of all the weird cuts. Usually by making a huge batch of meatballs.

You haven't met my DH! My only saving grace is that he likes crunchy and I prefer creamy. I got into the habit of avoiding peanuts when nursing DS because he had other sensitivities and I haven't gotten back into the habit of eating peanut butter again. Good idea, though, and we certainly have enough of it!

yeah I get it, it's REALLY frustrating trying to figure out diet, and then add on that budget. For a time we had no income, and the stress of trying to keep up with everything and balance food wasn't stress free for sure.

Oh, about leftover yucko cuts of meat - that is the annoying part. but you can do two things that I do. Simmer the thing like for broth, and then pick off the tender parts and stock up the freezer with healthy broths. Or cut it all up and grind it, or if you have a food processor you can do this by cubing meat, freeze for 10 minutes, then pulse a pound at a time until it loooks "ground."

I re read your posts, and it seems you are trying to figure out if you can get your breakdown to about what I eat. Just eating eggs, coconut oil or rendered bacon fat or something, and some nuts/veggies will give you the more 60/20/20 split.

I do not eat tons of meat. I eat canned salmon/kipper, anchovies, and lots of eggs, nut butters that I buy almonds in builk, soak and dry. I eat some fruit, lots of basic veggies. I'll quickly list over the last couple weeks my breakdown of fat/protein/carb. Not all the food, just the percentages because i DO track macro breakdown, it's just an annoying hobby lol.

so starting with Jan 25th, working backwards here's every days breakdown:

68/15/17 - jan 25th
59/21/20 - jan 26th....
57/17/27
58/19/23
62/12/25
55/22/23
49/30/21
60/17/22
41/29/30

Sometimes I eat more fruit, eggs, less meat which makes a little more carb, little less protein but more FAT. As you increase your fat and decrease your carbs your need for protein goes down a little. I eat at least around 100 grams of protein a day, and i weigh 125 pounds with very low bodyfat so that is more than enough for me.

If you want I can give you a few days of what I eat. I eat pretty cheap, simple stuff. I make use of my blender a lot.
