So, I have some beans that have been sitting in an open container for a while...

Is that a big deal? My husband poured them in some jars like a year ago, put them up on a shelf, and I totally forgot about them. Big deal?

Well, I'd rinse the dust off first. They might also be quite dry and need to be cooked a lot longer than normal, but I don't suppose they'll poison anybody.

This is what I figured, but I needed my feelings validated!

If they're not moldy then they should be fine. I would rinse and then soak them for a long time (at least overnight) and cook them till they got soft.

In my experience with older beans/peas though they often don't get as soft as fresher dried beans, no matter how long I cook them. They get soft enough to eat, but they never get mushy like fresher beans do.
