Egg Free Pancake Recipe

Does anyone have a good recipe for egg-free pancakes? Milk is fine, but DD can't have eggs.

What about flax? When I'm out of eggs, I sub 1 TB Milled flax seed + 3 TB water for 1 egg, and it works great! HTH!

We really like this one (courtesy of my Vegan cousin):

6 cups whole wheat pastry flour
1/2 cup each of: oat, rice, soy, corn flours
1/4 to 1/2 cup sugar (I use in-between)
3 Tbsp. baking powder
1 Tbsp. salt

Mix well. Store in air-tight container, use as follows:

2 cups mix (make a well)
Whisk 1 Tbsp. flax meal in 3 Tbsp. water - pour in well
2-3 Tbsp. oil (I usually use 3 Tbsp)
Add milk to desired consistency (I think close to a cup)
1/2 cup fruit or so (can use corn or shredded zucchini too)

This makes a LOT for our family - when FIL eats with us (he has a large appetite) we still have leftovers. That's three adults, two kids.

Alterations:
If you want to make choc chip or banana pancakes, add them after you've put the batter in the pan.

I have made this with part of the 6 cups of ww pastry flour being all-purpose flour. Do whatever you want for the 1/2 cups of other flours; I've never used corn flour myself, sometimes I make it with 1 cup graham flour, or whatever - I've also never used the soy flour. This is pretty adaptable. The first time I made it, actually, I made it with 6 cups AP flour, 1/2 cup oat flour (made by whirring oatmeal in my food processor), and the remainder of whole wheat flour, because I didn't have any whole wheat pastry flour on hand.

And, dh isn't a big fan of whole grains (he tries but he's not) and he doesn't mind the whole grain at all in this.

Another thing you can do if you don't mind baking mixes, is just get a pancake mix and use an egg substitute (either the flax as mentioned above, or if you cannot have flax then egg substitute (ener-g makes one). That's what we do when DS can't have eggs (he is on eggs again, not my choice as I think it's causing his pee accidents). But he also has to be GF so we get GF baking mixes.
