Grainfree Folks, tell me about your snacks

We've been trying to eat grain free and are feeling pretty good about it. I'm at a little bit of a loss for easy, grain free, low carb snacks. I seem to be eating a lot of raisins, nuts and Larabars. What are you eating for snacks?

We aren't grain free yet but I want to get there soon. Once we get settled in and I can really focus on that. But for snacks I like:

salami rolled with a pickle and raw cheese
cashew butter with sliced apple
boiled eggs with sea salt
sardines with hot sauce
canned salmon from vital choice(BPA free can)

Right now I'm really liking raw bell peppers,carrots, and zucchini dipped in sour cream

peanuts

The longer I'm grain free the less snacks I need/desire

My very favorite snack of late is to saute some diced fruit in coconut oil - I've been doing apples and pears but, you could do whatever you like. I sprinkle on some spices (cinnamon, clove, ginger etc...) and at the very end, add some nuts. The juice from the fruit and the spices and coconut oil make a syrup. I serve the whole thing over cottage cheese. It's super yummy!

sliced avocados with salt
cheese
glass of milk
bologna (beef, salt, and rapadura from an Amish farmer)
left overs (fritata, coconut flour pancakes or muffins from breakfast)
very occasional fruit 1-2x/week
crispy nuts (Walnuts are good put in milk with some cinnamon and eaten like cereal!)

-deviled eggs (I'm dying to try these fat guacamole devils--was this your recipe lil_earthmomma?)
-jerky would be a fave, I'm sure--I just need to make some!!!
-fruit w/ nut butter
-coconut bark--often a blend of coconut oil, cocoa or carob powder, -sweetener of choice (honey/stevia/etc.), sometimes nuts or nut butter--I freeze mine in a silicone mini muffin tin--they pop out into perfect reese's peices like circles
-eggs made however--2 eggs are an awesome snack when you're hungry!
-veggies w/ some kind of mayo and coconut milk dill dip (or a dairy/mayo/sr creamy dip--we are dairy free)
-green smoothie
-nuts/seeds
-chopped nuts and seeds w/ some raisins covered in coconut milk, sprinkled w/ stevia--reminicent of breakfast cereal
-coconut flour muffins
-homemade lara bars--I do dried fruit w/ seeds/nuts, food processed together, add coconut oil, freeze and cut into little bars
-bacon

Well I did tell the mda'ers about my guacamole devilled eggs, but I didn't submit a recipe so someone must been inspired!

They are SO SO SO SO SO good. Mmmmmmmmmmmm...

I really like to dip pecans in mustard. (I know, I'm weird.)

Salad. I mean it! I really yummy salad can be thrown together in 5 min, and is so satisfying. Think BLT salad, or a taco salad (left overs help with this), egg salad salad, cobb salad, chicken cesear. Mmmmmmmmmmmm SALAD.

Soup is good for a quick snack/meal too. I usually have soup in the fridge so that anyone who's hungry can heat up a meal with no prep.

ETA: almost forgot my new favorite toe curling snack:

Cube up an avacado, stir in two tbsp of salsa, one tbsp of sour cream. Slice some mozzarella cheese and use as chips to scoop up the avacado mixture. OMG try not to moan too loudly, or someone else will want some!

in my quest to find a good 'snack vehicle' I made these yesterday - perfect for all those cracker toppings you don't know what to do with:

3.5 cups mixed seeds (I used sesame, sunflower and pumpkin, nuts would probably work as well)
3 eggs
1 heaping T coconut flour
1 heaping T coconut oil
1 T ground flax seeds
pinch salt
1 banana
1 tsp cinnamon
1 tsp ground ginger
1 cup finely shredded coconut
splash of milk or water

I ground the seeds in the FP, added everything else to form a thick paste and then spread it into a lined/greased 9x13 pan and baked at low (80C on my oven) for about an hour. It's awesome! Kind of bread-like, totally savoury with just a hint of sweet nuttines (think - like how whole wheat can be). I cut it into squares (they are thin-ish) and have been eating them with things like:
-slathered in butter with a smear of honey
-spread with melt-y camembert cheese & sundried tomatoes
-topped with a few salad leaves, raw cheddar and a smear of hot sauce

mmmm. . . can't wait to try with fish, avocado, cream cheese. . . . nut butters. . . .
