I pretty much eyeball everything so keep that in mind.

1 lb ground meat (any combo is fine)**
1 egg
1/4 cup tomato paste (or ketchup if no paste on hand) more or less as needed
1/4 cup shredded cheese
1 TBS horseradish
1 tsp hot sauce
1 tsp oregano
1 tsp basil
S&P to taste
oatmeal- enough so the meat is no longer wet and will easily form into loaf. If its too dry I might add some milk or more tomato paste. Too wet and I keep adding oats.

Bake until done

**I often will replace about 1/4 of the meat with mashed black beans or even refried beans. When I do I use shredded xtra sharp cheddar, drop the horseradish and add some cumin and chili powder

I fry mine in an electric skillet. I make usually about 48 from 3 lbs of meat, so they're about an oz each. Them I freeze 2 packs of 16 or so. I use a Foodsaver.

My fave way to use them-crockpot spaghetti and meatballs, on a day we go skiing. We come home to a super yummt dinner

I like to:

Pan-fry first to brown the outside (still rare in middle)
Transfer to baking dish, cover in sauce
Bake in oven to finish

PioneerWoman's meatballs are fantastic:
