Got a good elk recipe to share?

My mom and her boyfriend just bought me a whole, whole bunch of elk meat. I made some fabulous steak tonight, but I don't know what to do with the rest. Well, there's lots of burger and I can figure out what to do with that, but for the roasts, etc...

Anyone care to share?

wow, down in texas we don't ever get elk. but my husband does have enough friends that give him deer meat that I have had to get creative. I've only had a couple real successes:
chicken fried venison (search allrecipes.com, there are a couple good ones there), assuming elk is similar to venison... but chicken fried anything should be pretty good
jerky - slice it thin, marinate in spices/soy sauce/jerk seasoning and either use a dehydrator or your oven on real low - 150 or 200
ground up or chopped up in chili or stew

good luck! at least you have some cheap, fairly natural meat to experiment with!
