What to cook for a diabetic and some teenagers?

Back story: Our boss broke her ankle in four places and had to have surgery to insert pins. She's back in town, but on pain meds and not really able to cook. Her husband doesn't cook, and her teenagers would just eat... well, stereotypical teenage junk food if left to their own devices.

So what we've done (our boss's boss, boss's boss's boss, and us underlings) is each taken an evening for the next two weeks. We're to cook dinner and deliver it.

So... what should I cook? She's a Type II diabetic, her husband has no special dietary needs, and they have the two teenagers (her biological daughter and a former student who is staying with them so she can finish high school... wasn't happening when she was living at home). It needs to be something I can prepare the night before, and either crock pot all day long while I'm at work, or throw in the oven quickly when I get home at 4:30 (we're to deliver it by 6pm). They eat pretty "non-crunchy," but are fairly health-conscious due to her diabetes, if that makes any sense.

Throw some great ideas at me...

The healthiest according to who? I happen to think that the American Diabetes Association is killing diabetics with their dietary recommendations.

I'd avoid sugars, grains and starches (pasta, rice, and potatoes), and minimize legumes (which also raise blood sugar a lot). I'd probably bring over some sort of chicken dish with a large green salad. You can't go wrong with a meaty crockpot dish, as long as you avoid adding sugar (ie. juice, fruit) and starch (pasta, beans, potatoes, etc.). Oooh, how about a corned beef? Mmmm....

Exactly. I want to bring something healthy, but also don't want to send over something that no one will eat.

What about chili? You could do that in the crockpot (I actually have some cooking now ) and you could bring over a salad, some sour cream, cheese, and avocado to go on top. That's a pretty low-glycemic meal that can also be a crowd pleaser...

ETA: ITA w/jplain. I make my chili without beans, just beef.
