What to do with leftover mash?

I did a super-yummy parsnip and potato mash, with sour cream, chicken broth, Jane's salt/pepper seasoning, butter. I'm gonna have a ton leftover. Any ideas? Any would be much appreciated!

Add diced onion, an egg or two and a little flour and fry it up in cakes, that's what I usually do.

Oh yum, that would also be good.

When I make potato pancake type things I add a bunch of zucchini.

depending on how much, I might just reheat it and eat it as is (or use one of the other brilliant ideas here.)

For reheating mashed potatoes, add some milk to the bottom of a pan, put the potatos in and stirr over mediumish heat.

when we have this type of leftover, I'll pack it into a storage container and refrigerate, then when it's cold slice it and fry it like that. never thought to add the extra stuff but that sounds yummy too!

I often put some cheese on leftover mash and reheat in the microwave for a snack.

As well as fish cakes it's a good base for veggie burgers.

It's also great for thickening soups.
