looking for my lost coconut oil fudge recipe

I'm hoping someone here can help me. I found an AMAZING coconut oil peanut butter fudge recipe a while back and cannot find the link anymore! I tried various google searches but nothing. It was on a blog that belongs to a mother of several children - I think she was an AP homeschooling mom, which is why I thought that maybe I originally got the link here!

The ingredients I remember are....

coconut oil - or a combo of coconut oil and butter
peanut butter
honey
cocoa powder
vanilla?

It was all melted on the stove, poured into a pan and frozen. I'm sure some people would do well just guessing the right amounts, but that kind of cooking never seems to work well for me. (probably because I am too type A)

I have a recipe for something similar, with similar ingredients. I will try to remember to post it for you tomorrow.

I am not type A, even though I wish I was, but I make that candy all the time and even though I always wing it, it is delish!

I use almond butter instead of peanut too!

Ok I really want to make this so I started googling. I found this series of videos which is a little annoying, but here is the recipe...

1 C coconut oil
1/4 C almond butter
1/4 C honey
1 Tbs vanilla
3/4 C cocoa powder or carob powder


Combine all ingredients in double boiler until melted & uniform. Place in a parchment lined, buttered dish, refrigerate or freeze until firm, cut, eat!

I'm going to try it with PB because I'm out of Almond, but that should help you with the amounts!

Ok, here is my recipe. Sorry it's taken me so long to get back with it.

Coconut Fudge Bars
1/2 cup coconut oil
1/2 cup cocoa powder (can be reduced to 1/4 cup, if you prefer)
1 cup honey (again, can be reduced, depending on your tastes)
1/2 cup nut butter
1/2 tsp. vanilla extract
1/2 tsp. almond extract
Pinch of salt
3 cups shredded coconut

In a saucepan, gently heat all ingredients, except the shredded coconut. You can skip heating, if you like, it is just easier to get everything to combine nicely. Remove from heat, and mix in the coconut. Pour into a greased 8"X8" pan. Chill thoroughly, at least 2 hours, before cutting into bars.
