What do you make for a take along breakfast?

I'm looking specifically for ideas for dh and he prefers something to which he can add hot sauce.

Ideas?

Breakfast egg salad

Or similar - 1 chopped hard boiled egg and half an avocado, chopped, drizzled with olive oil and salt & peppered. You could wrap in a tortilla or pita bread and top with hot sauce.

avacado and cheddar sandwich on multi grain bread. Hot suace would be xtra yummy.

Assuming you eat eggs? deviled eggs, egg salad, fried egg sandwich. all great with hot sauce.

morning star veggie sausage links in mini hot dogs rolls.

potato and zuccini pancakes.

Does it have to be "breakfast" foods?

how about cold veggie pizza or black bean and cheese burritos?

I should have been more specific. Dh is allergic to all dairy, eggs, yeast, and gluten so I thought this would be a good place to get dairy and egg free ideas.

black bean patties with avocado slices - this one might work

Either a mash mix of potatoes, black beans, peppers or cubed potatoes and etc could go in a breakfast burrito to avoid using eggs & dairy.

smoothies and fruit salad work too - as would fruit slices and nut butter. (dunno about hot sauce on those)

I would think you could do a lot with polenta. Maybe make a thick round in a pie dish and then top with sautéed spinach, mushroom and veggie crumbles? Hot sauce would add a kick

Or how about making and freezing gluten free pancake. I have seen recipes on here for almond flour ones or even make johnny cakes out of cornmeal. Freeze between layers of wax paper. You can then pop a few in the toaster in the AM and top with some kind of nut butter for protein and good fats. Not so good with hot sauce though!

Oh- I forgot about these! I made these awhile back for wedding shower brunch. Her mom had celiac's.

I made another batch with lemon rind instead of orange and substituted candied ginger for the cranberries to make lemon/ginger ones. Again- not so good with hot sauce but you could make scallion ones for more savory so the hot sauce would be a nice addition.

You might find some other ideas on that site too.

I go back to potato pancakes too. These are easy to make, you can use any kind of potato, even sweet, they freeze very well and are easy to reheat. Also great with some hot sauce!

Ooh how about rice pudding made with almond milk? You could probably make it more savory than sweet. Making it small glass bowls would make it is to take on the road,

He's a creature of habit and for the last 4 years each work day he's had a frozen egg muffin, sausage, egg and cheese sandwhich for breakfast and a bean and cheese burrito for lunch.

I'm still a little lost as what I could send with him because he eats at his desk at work, including breakfast, so my ideas seem to fail one criteria or another.

We make a big batch of pancakes and freeze them, then reheat for on the go. They only take a couple sec in a microwave, or they're really good quick reheat in the toaster. Doesn't work with hot sauce, though! You can do gluten free pancakes though, I believe.

So is the gluten, egg and dairy allergy is a new thing?

Also I assume he is no longer eating meat/sausage since this is the veg forum?

I am always up for a food challenge so I guess it really comes down to...
  • what does he *like*? What are his favorite flavors? at home meals? can we build a portable meal around that?
  • Does he a have a good lunch box? A good lunch box solves a lot of eating at work issues. How about a thermos? great for hotmeals like soup and leftovers
  • Does he have access to a toaster, toaster oven or microwave?
  • are there any restrictions at his work place about food ie: we can not reheat any corn or peanut products in the microwave due to allergies. And an unwritten rule about really smelly food.

I bring an AM snack, lunch and pm snacks to work every day. I (now!) have a nice big lunch box, really good storage containers, access to toaster and a microwave so meals at work are easy. They just take some pre-planning. And I have my fall back meal for days when I don't have my act together: a handful of nuts for the AM snack, TJ's veggie burger, topped with cheese on a whole wheat roll with some carrots/hummus on the side, some fruit and cheese for the PM snack.

Honestly? It shouldn't be that hard if has to eat both meals there and has been for quite some time. Is he just really picky? if thats the case let him make his own lunch! just kidding!!

Will he eat tofu? You could slice & fry it or scramble it. That would be a good replacement for the eggs. My vegan & gluten free friend LOVES to make fried potatoes & soyrizo for breakfast. It is one of my favs now too, especially with a little tahini & peach salsa on corn tortillas. He can still have his beans for lunch, just put them in corn tortillas for soft tacos instead of a flour tortilla burrito.

You can put tofu in a breakfast burrito. Scramble it with veggies like you would eggs and put it into a corn tortilla.

Beans and rice would also make a good breakfast burrito.

I love tofu scrambes on their own too. Season with turmeric and onion salt and toss in some veggies. Serve with toast and hashbrowns. Yum.

Make some gluten-free biscuit dough, stuff it with something he isn't allergic to. Fold the dough over and close shut. Empanadas or pasties. They can be fried or baked. You can stuff them with leftover chili or curry. Excellent cold and excellent with hot sauce.

Other posters have already commented about tofu which is what I use as an egg substitute with breakfast dishes. For the quesadillas he could probably use a vegan cheese, I don't think there would be anything he would be allergic to in it. He could also use that for the burritos as well. Add ins would be beans, chopped veggies, olives, tofutti sour cream, etc...

i reall like making chickpea flour "omelets" (no egg)

mix chickpea flour with water until pancake batter consistency, add onion, tomato, green peas, anything you want, butter or oil pan, pour in, flip,

really good! you can roll, wrap in foil and eat
