Would this recipe work without?

I don't have chipotle pepper nor would I recognise one if I saw it. Any ideas what can I replace it with?

Oh, I love her recipes! Adobo sauce is smokey-spicey, so if you want to keep the spice you can add hot sauce probably, but you could also just leave that element out, I'm sure. It's a strong flavor, so maybe just up the other spices? Do you have roasted red peppers? That would take this in a different direction but would be tasty. Instead of the spicy sauce, you could also go for a briney one, with roasted peppers, olives and capers. Or a lighter, fresher sauce with capers and lemon zest. Or a sweeter sauce with lots of roasted garlic.

That recipe looks seriously yummy!

If you have smoked paprika, a little of that would work to help add a smoky flavor like chipotles in adobo.

However, chipotles in adobo sauce is found in small (about 2.5" tall and 2" diameter) cans in the Mexican/Hispanic section of most big groceries that I've seen. After opening the can, I chop up the rest of the chipotles and freeze in a long tube. That way one can lasts me forever, and I can easily break off whatever I need.

Chipotles in adobo really do add a nice smoky/sweet/spicy flavor to a lot of foods, so I find them useful. They're great added in a small (teaspoon or so) quantity to sauteed garlicky greens, for example!

Thanks!

I do have smoked paprika. I live in the UK though so we don't have a mexican isle. I might have to see if I can find it from the internet. Its good to know it last in the freezer.

With the smoked paprika, I'd add a bit of extra tomato sauce (about the amount of chipotle called for) plus a 1/2 teaspoon to a teaspoon of brown sugar.
