-sausage patties, precooked, then reheated in the toaster oven prior to getting out the door? (Maybe broken into smaller bite sized pieces and put in a tupperware bowl, etc? I can't remember what my son could/couldn't eat when he was one...if he can do any other small chunks of meat independently, I might try a wider range of stuff if I was shooting for more protein--chicken, beef, etc...)
-I wanted to second the waffle idea--check out this:
http://www.suegregg.com/recipes/brea...erwafflesA.htm Very TF and there are easy ways to make it gluten/dairy/egg free. Add some ground seeds or nuts (that he tolerates) to the pancakes to up the protein? (You could use flours like millet or quinoa blended w/ buckwheat--I believe their protein content is higher...)
ETA: You could make these and freeze them to be reheated in a toaster/toaster oven prior to eating.
-you could make muffins/cookies using mashed beans or lentils as part of the batter to up the protein content. Some folks puree meats and add them to muffin batter as well (maybe a more savory kind of muffin though!)
-I too like the smoothie idea--you could also add greens to the smoothie, and coconut milk--or maybe a seed/nut based milk (again, only if your kiddo tolerates it) for more protein.
HTH!
