A vegetarian is coming over for dinner. Help!

I need ideas for tasty egg-based meals (dairy-free and wheat-free) that aren't too hard to make.

What can I do with eggs that is supper-like? Is there any casserole-type dish that combines eggs and beans?

Is corn ok, as in sprouted or organic corn tortillas? What about huevos rancheros minus the cheese with a side of beans and a salad with avocado?

You could do something like this (maybe add some peppers/onions to the beans), and I'll second having some avocado on the side.

Does the meal HAVE TO include eggs, or could you make some sort of rice and bean meal? Vegetarian chilli over rice can be delicious, or a bean stew. Or you can make bean burgers (cooked beans, eggs, maybe potato starch or rice flour to hold it together better) and fry up in olive (or any vegetable) oil, and serve with rice or potatoes and a vegetable (or two or three) on the side.

If you really want to do an egg dish you could do an egg/potato quiche with a salad.
Rice and beans is a yummy easy quick meal.
Or egg fried rice w veggie rolls, and salad

There are lots of delicious vegetarian things you can make -- if you have any cookbooks handy, almost any of them will include meatless dishes. Here are some that are usually acceptable to the omnivores at the table too:

A frittata (basically a baked omelette) with any fillng that appeals - you can add beans, grains, cooked vegetables, herbs ...
Bean chili
Red beans and rice
Egg foo yung and rice, with a stir-fried vegetable dish to round it out
Quinoa salad, or a vegetable stew served on top of quinoa
Stuffed baked potatoes with beans and vegetables
Lentil soup and a green salad (best with crusty bread, but oh well!)
Bean burgers or patties, french fries, and a vegetable

how about migas? I love migas. it's sort of a breakfast food, but so tasty, and we love it for breakfast for dinner.

saute some sliced tortillas (like 2-3 tortillas a person, corn or flour, so you could maybe use corn?) in olive oil. when it's golden, add a can of tomatos (maybe 2 or a big can. I use 1 can for 1-2 people, as the only thing we're eating. but its really good with rice and beans as well, which stretches it.) cook that a big, crack in an egg a person, salt and pepper to taste, when the egg is cooked serve with beans or rice and beans, and green salsa.

I often put eggs into things like fried rice or stir-fries. You'd just need to make sure any sauces you use are dairy and wheat free.

Oh my now thats complicated I like the idea about fried rice and eggs, yes it can be used. If you had fish though, you could fry it up and add it with the fried rice. I assume that would be a tasty meal for the person.

Our family loves frittatas (we have them at least once a week) and they are very versatile. How about curry with just veggies or tofu instead of meat on brown rice? Black bean (or lentil) burgers totally rock and are so easy to make.

You can tell I love asian-style food. Another recipe I thought of is pad thai. Again you'd need to make sure all sauces are ok to use, but it frequently has scrambled up eggs and tofu in it (assuming tofu is ok). The noodles in it are rice noodles so no wheat there.

Really with some of these suggestions it would be easy to make a veggie version and do the meat on the side and add in for those who eat it. That would be nice instead of having the veggie eating something totally different (though even in that case I'm sure he'll appreciate your thoughtfulness).

Does anyone have a good frittata recipe?

Or alternately, would a dairy-free, crustless quiche (with side dishes, of course) sound at all appetizing?

Oh, sorry I don't have a specific recipe for huevos rancheros, it just sounded good at the moment hehe. I've seen recipes with an enchilada type sauce or a salsa on top.

I'm having a love affair with curry, lately. A curried potato/egg dish would be good. Or curried rice dish. Turmeric rocks the bod and curry dishes can be easy.

Can you do a crust for a quiche with spelt or some other grain, or does it need to be grain free?

My mom used to make a quiche crust by slicing potatoes into thin rounds and then laying them down in the pan. That's how I grew up eating quiche and it was great!

Hmm, Vegetarian, dairy and wheat free. What about Mexican theme. I just made this last night. I whipped it up in 15 min.

Rice
Beans (black or pinto, cooked w/garlic and onion powder and cumin)
fresh salsa
fresh guacamole
shredded romaine lettuce
sweet corn w/butter

You can put cheese,sour cream, etc. on the side for those people who do eat dairy. You could put meat or tortillas also on the side to include a little some thing for everyone.
