Yum, I love curry. Some more ideas (ones I've actually made myself) are potato/cauliflower curry or chickpea curry (a classic indian dish).

You can put cheese,sour cream, etc. on the side for those people who do eat dairy. You could put meat or tortillas also on the side to include a little some thing for everyone.
That's a good idea too. Hmmmm, decisions....
