Does anyone do veggie ferments for only themselves?

I've dabbled in doing veggie ferments, and have had a couple of failures and a few successes. There's four other people at my house but none of them will even try them. So I am wondering how it works doing smaller amounts - is the method just the same? Or do you even do smaller amounts? I know they're supposed to keep forever but do they really?

They will keep forever. Seriously. Months at least--some folks keep them for years. I make mine for myself and ds, and ds just picks at them (like, a ginger carrot or 2 if I'm eating them, a little scoop of sauerkraut there, etc...not a ton). My last batch was made in July or August maybe? And we are still going through it now--probably will have enough till next summer! We'll see!

Dh is horrified by them, won't look at them, tells me the fridge smells b/c of them. Acts like he wants to throw up when I open a jar of them. Oh well! I LOVE them!

Haha FairyRae, that's how my dp acts about ferments too Not that it fazes me. I love me my giant jar of sauerkraut that takes 5 months to get through because nobody else eats it! So yes, OP, I do ferments even though I am the only one eating them. Apart from the sauerkraut, I usually do small batches, maybe a liter or half a liter at a time. I just don't eat other ferments as much as sauerkraut.

Yep, except for salsa, my family thinks I'm crazy. I just giggle that they think my salsa is so much better than any other they've tried, but they won't consider the other foods. Whatever.

We buy our ferments, but i can attest to the fact they keep well for a long time.

We are all allergic to veggie ferments except dh. He love ferments but it takes him so long to go through it that we have quart jars full in the fridge going on 2 years old. And it is sooo good still. I find it more worth the time to make lots at once, like several gallons at a time.

I have this theory that alot of peoples cravings are actually a result of bacteria in their body. Most of these people eating the standard diets have an unhealthy balance of gut bacteria and are somewhat pathogenic. This influences their tastes... to the point where they are actually repulsed by these healthy foods.

I think deep down most people crave healthy fermented food though... that is why people like soda so much. the acidity of it is just like a fermented beverage. They just have to eat differently and over time after their bacteria has been reestablished then they can know what is actually good for them again. Just a theory anyway
