hi, i'm trying to make cream cheese and whey from NT. today is day 6 and it hasn't completly seperated yet. maybe because the weather has been cool? should i just let it be and wait?
also, i make 30 minute mozzarela with citric acid and rennet. could i use the whey left over from that for fermenting veggies?
