I'm so in! I am trying to clear out my pantry and freezer too so I'm doing a little pantry challenging as well

I may post some lunches from time to time to keep me accountable as lunches are tempting for me, too on those super busy days ....

2/1 - lunch: leftover corn bread w/ honey and a small salad
dinner: leftover spaghetti from Sunday, salad, and ice cream for dessert

2/2 - lunch:

Ok I am in... We have a house full of food and never make it
So far -
1 Left over chicken chili and chips (I didn't even have to make it, a friend dropped it off Thanks Angel!)

February 2 - Leftover roast beef stir fried with leftover brown rice and onions

I am also keeping running total of the days I bring my lunch to work: 2/18 days

2. We have extra curricular activities tonight so this is a hard one for me, we usually eat out. I'm thinking PB&Js, fresh tomatoes, and apples.

Jan 30: Thawed out a 2-pack of pork tenderloin and 2 lbs. ground beef, grocery shopped for the week <$25 (excluding what I need for this weekend as we made Superbowl plans after the mealplanning/shopping had been done)

1 - Pork Tenderloin (from 1940s cookbook), Mashed Potatoes, Carrots, Corn
2 - Shepherd's Pie (with leftover mashed potatoes), Salad
3 - Maple Pork Tenderloin (http://www.mealsmatter.org/recipes-meals/recipe/14521), Rice, Peas, 1 other veg.
4 - Leftovers (dog class night)
5 - Taco Salad
6 - Guests over for dinnner - Frozen lasagne, Salad, homemade bread
7 - Guests over all day -
Breakfast - Slowcooker hashbrown casserole
Lunch - undecided, maybe BLTs, soup, grilled cheese...?
Dinner - Burgers, Superbowl junkfood (undecided, choosing from Pioneerwoman recipes...)

I find it's easiest to keep my grocery costs down by meal-planning - it also saves me from the "oh... I don't know what to make for dinner tonight... let's just go get a pizza".

I want to try this!

I just joined this site and posted on the " no spending" thread, this is all after I over spent this week on groceries (my weakness). So my house is full of food! I'll be making baby food today and thawing chickens and ground meat for a little make ahead stuff.
Feb
1. pasta, salad and bread
2. tacos
3. chicken scallopini, roasted cauliflower, home made bread (maybe if the baby sleeps long enough

I did really well last month, even though I didn't keep up with the thread. I haven't decided what is for dinner tonight.

I'm in again. I like the accountability and hearing what everyone else makes/eats. These threads have also made me plan better too. I also feel greatful for DH at the end of the month when I see how many yummy meals he makes in a month.

Feb 1--German night! DH made schnitzel and spatzle and green peas. Very good for never having made anything like it before.
Feb 2-- the plan is sweet and sour pork

Oh! Spatzle! How did you/your dh make it? That sounds like a really yummy meal.

I am also using this for a pantry challenge, trying to clean out my freezer and use stuff from the pantry before I go buying more stuff.

1. stir fry of some kind...chicken with bok choy
2. tortellini with tomato sauce from jar, salad
3. roasted eggplant mixture, chicken, sweet potato fries
4. Vietnamese pork, stir fried green peppers
5. leftovers
6.
7. super bowl party at FILs

Is anyone having a hard time this month? I feel like I used up all my creativity last month and I can't think of anything good to have. I have lots of roasts in the freezer, pork and beef, but I'm not a fan of your usual "roast". Anybody got any good ideas?

1-Teriyaki chicken, acorn squash, rice, I know there was another veggie cannot remember it
2- Greek chicken, spinach salad, corn, steamed potatoes (went to BK for lunch as had crazy low blood sugar and only snack in purse was one with almonds, which I'm allergic to)
