i am on a baking tear. i. can't. stop.

i want to try to make a vegan banana creme pie for dp. but with no sugar (we don't do refined sugar). i found a pudding recipe (here on mdc), but what about the whipped "creme"?

any ideas?

anyone else baking tasty vegan treats?

I'm thinking of doing a zucchini bread if I can find a no sugar recipe. Haven't found one yet though. Do you have one?

I know of raw vegan creme pie recipes and they do a cashew/coconut creme on top. I believe it has agave in it. Do you eat agave?

Tonight's dinner is vegetable soup.

MMMM that looks good. Gonna have to try that this weekend. It's not all that different from the original recipe, just takes out the onion and shallots and adds in the nut. yeast. I'll let you know how it is.

Tonight was baked tofu (but I used a new marinade recipe that was pretty good but really strong) & sweet potato fritters. The sweet potato fritters tasted almost like donuts but they had no sugar in them. Yummy!

whoops! sorry- Kale chips are easy, wash and dry your kale, remove stalks if they are thick, toss with a little olive oil and spread on a baking sheet, then sprinkle with a little couse salt and bake on high heat for less then ten minutes until crisp.

The burgers? hum, kind of a creation based on the seventh day wanut oat patty recipes i have seen- they had a brown rice and fresh bread crumb base, with loads of nuts, carrots, some onion and garlic, and cumin for spice. I used ground flax and water for the binder- i ended up grinding most of the component individually in my little spice grinder since my son was asleep, and let mixed it all together, i wish i knew better what i did, because they would be good to make and freeze.

Last night we had palak paneer (tofu) with dal and rice, and tonight i made a rice, veg and cheez cassarole, trying to clean the fridge, Going to town tomorrow hopefully and shopping, we are having a make your own pizza party as a house warming saturday and i have to buy cheese (not vegan, i know, i am offering a cheez sauce too, but i don't think everyone is going to be willing to try it).

please, do tell more! sounds yum--and like something that could replace the pudding/bananas/vanilla wafers dish my Nana used to make.

i have not ventured deeply into vegan desserts, but i am feeling ready to plunge.

That is a link to a raw banana chocolate cream cake that uses the whipped cream I was thinking of and has the recipe for it. I have never tried that cake...just made the whipped cream as part of other recipes. I was too lazy to type it up myself. The whipped cream is a recipe from Cafe Gratitude - an amazing raw restaurant here in the bay area. They have two cook books. BTW, I love the blog this recipe is in. She has amazing food porn!

Let me know how it turns out! Oh also, I once made a raw vegan banana creme pie. The recipe is in Living on Live Food by Alissa Cohen. Great book if you can get a hold of it! Hmmm...maybe I'll have to make it again!

what a great thread! i'm so glad i found this forum. there are so few people IRL that understand our choice to be veggie, so finding like-minds is awesome.

yesterday i whipped up some chickpea salad for lunch. i added nori flakes and celery. and even DH liked it and he's not a huge fan of my cooking. (he's veggie, but a much better cook than me!) we had veggie burritos out for dinner, but for a snack last night i made vegan ranch dressing and we ate celery with it. yum!

Tonight DH and I made smartdogs for the first time - wow! I'm not a hotdog fan, and this was my first time to try them - but I was impressed. I'm sure they're super processed, but pretty good wrapped in whole-wheat bread with deli mustard and bubbies sauerkraut. Oh Man Yum.
