I sprouted pinto beans and have NO CLUE what to do with them!

Anybody have any suggestions? Also, there are many beans in there that didn't sprout... Don't know if I should wait on them or just eat them all now before things get hairy. I looked up a few recipes on line, and kept running into people saying that you shouldn't eat many kinds of bean sprout raw as they still contain the toxin that would otherwise be neutralized by cooking. Thoughts?

Anyway, I have a GOB. I sprouted about three or four cups of beans because last time I tried to cook them they didn't cook up well. I am thinking they may have been oldish, and maybe that is why some of them didn't sprout. I would totally appreciate some ideas on what to do with them. Not adverse to cooking them... How do they taste cooked?

I think it's fine if some don't sprout--if they were going to, they have probably started inside and have taken care of a lot of the phytic acid etc. just like the ones w/ tails.

I've not sprouted pinto beans, but have done garbanzo and kidney and lentils. I always cook them after, just like I would cook beans after sprouting--just a little less time (test them to see when they are the right softness/consistency). Then use them as you would regular pinto beans. (Any I don't use right away I freeze in 1-1.5 cup baggies for use later. Pre-cooked you'll just need to thaw them/heat them up and serve.) You could make refried beans, taco filling, chili? etc...(I don't use pinto beans a lot so don't have tons of ideas.) You can also use cooked beans in various baked goods recipes (You could use them for this chocolate bean cake. ) There are more recipes in the TF archives for bean based cookies and cakes. The spunky coconut blog has some recipes for these too...I made a lentil bread not too long ago (grain free) w/ sprouted lentils--I bet beans would work in place of the lentils...(search the archives if you're interested )

Thanks for all the suggestions. The bean cake seems SOOO cool, alas I don't have the ingredients on hand. Definitely work trying another day though. I think I am just going to go ahead and make some soup or something.

Chili. I did sprouted chili a few times with sprouted pintos and kidneys. As PP said, they will cook in much less time than soaked beans.
