Fruit!

Whatever's in season (I am getting tired of apples and pears, but not the citrus!). Eaten raw, out-of-hand. Easy-schmeasy. I had a co-worker tell me while watching me wash an apple she didn't have time to put together healthy food to eat at the office. I think grabbing some fruit and carrots and celery before heading out the door is about the easiest, least-time consuming food-prep you can do. I keep raw nuts, almond butter and raisins stocked in my office, too.

I make a muesli-like breakfast sometimes that is truly yummers.

I use a handful of rolled oats, a handful of chopped walnuts (or other nuts), some dried fruits. I add a half cup of So Delicious coconut kefir (plain) and let it soak for a few minutes. It's fabulous.

I rotate the breakfast menu between: Biscuits and gravy, whole wheat muffins (with nuts, fruit, etc), scrambled tofu and potatoes (cubed, tossed with a little olive oil and baked), polenta, oatmeal, whole grain toast with peanut butter and homemade jam. whole grain pancakes and twice a month we have bagels.

My oldest and I also eat leftovers for breakfast.
