Fruit!
Whatever's in season (I am getting tired of apples and pears, but not the citrus!). Eaten raw, out-of-hand. Easy-schmeasy.
I had a co-worker tell me while watching me wash an apple she didn't have time to put together healthy food to eat at the office. I think grabbing some fruit and carrots and celery before heading out the door is about the easiest, least-time consuming food-prep you can do. I keep raw nuts, almond butter and raisins stocked in my office, too.
