NT Apple Butter with fresh apples?

Hi, I am new to the whole fermentation process and I have a question about one of the recipes in NT. It's the apple butter version of the apricot butter and it calls for dried apples. I only have fresh apples will that work and how will I adapt the recipe. It calls for 4 c. of dried apples that you then soak to make soft. TIA!

apple butter starts with applesauce. I wouldn't dream of using dried fruit just to re-cook them, it seems kind of a waste of dried fruit, which have a different purpose IMO!

I don't have time to elaborate and give complete instructions but just google and you'll find a bunch of recipes, generally the same
