Favorite "Just You" Meal?

What is your favorite just you meal that you eat when not cooking for others? Do you take the time to cook for yourself, or do you turn to takeout or frozen/canned fare?

My favorite just me meal is roasted red pepper soup with crackers or bread. I also love toast and mashed avocado.

If it's just me, I don't bother cooking

BUT if it's summer and the garden is full then I usually just make a huge salad with nuts, seeds, and whatevers busting out in the garden...thats my fave meal ever

Most people wont tolerate a salad by itself, so that's my favorite 'just me' meal. Giant salad or slaw packed with raw veggies, maybe some nuts or seeds, with a homemade dressing. And I mean BIG. =D

Salads are good. I just had one this weekend with roasted beets and grapefruit. It was so delicious. And generous helpings of sunflower seeds and toasted sourdough.

I don't cook if its just me either. If i want a me treat its air popped popcorn with lots of earth balance, nutritional yeast and a pinch of salt.

Not really cooking, but my favorite "by myself meal" is garlic hummus, avocado slices and sprouts in a pita or on a toasted bagel

Halved cherry tomatoes, black beans, jalapeno peppers in a bowl with baked tostitoes and vegan sour cream ... it's my love and my nemesis :P

A sweet potato with butter and brown sugar.

A Chicken burger (the tyson frozen ones) with homemade buttery baked potato slices.

Homemade pizza bagels.

before i had kids it was port wine cheese spread and wheat thins Or
baked potato with butter fried egg and broccoli

Well tonight it was just me so I heated up a homemade (GF brown rice crust) samosa and made home made sweet potato fries. It was awesome.

Every meal is pretty much just me!
DH and I have different schedules and therefore mostly eat by ourselves. No kiddies yet, so I make what I feel like. Lately, I like what's quick and easy without much fuss. That usually comes down to brown rice, frozen veggies and or a big salad made from whatever I have on hand.
I'm a sandwich gal too, so some ezekiel bread with whatever I have on hand turns into a meal for myself.
