GF Buckwheat Pancake Recipes

I want to try to make some gluten free and dairy free buckwheat pancakes. Does anyone have a recipe they could share? Should I soak the buckwheat flour first?

I have a buckwheat waffle recipe that's delicious, and I think it would translate well to pancakes.

Buckwheat Gluten-Free, Dairy-Free Waffles

1.5 cups freshly ground buckwheat flour (I grind it up in a coffee grinder.)
1 cup fruit juice
1 teaspoon apple cider vinegar

Soak above mixture overnight at room temperature.

3 eggs, beaten
1/2 teaspoon salt
1 tablespoon baking powder
1/2 cup shredded coconut
3 tablespoons melted coconut oil

Mix the above ingredients together and stir into the soaked buckwheat mixture. Add more fruit juice until you get a proper batter consistency.

Cook with coconut oil.

I cook these in an old cast iron electric waffle iron. I set it on Medium and cook two ladle-fuls of batter for about 10 minutes. I grease the waffle iron with coconut oil.

Serve with stewed fruit and fried eggs on the side.

Do the pancakes have any apple cider vinegar taste after they are cooked? My husband abhors ACV and won't eat anything with ACV in it.

You're very welcome!

No, no, there's absolutely no ACV taste at all. It's only a teaspoon, which compared to the whole batch of batter is very little. If you use an acidic fruit juice (like orange), you could skip the ACV altogether. The acid is just for the phytates in the buckwheat.
