Favorite Sugar/White Flour-Free Foods/Meals?

Good morning!

For the next 40 days, my husband and I are ridding our home and our bodies of sugar and WHITE flour. We still use stevia, and will use a TAD of maple syrup for smoothies and such. But other than that...they're out!

However, now I'm at a loss. What do I eat? I know there is LOTS to eat! And we did just have SIX pounds of GOOD cheese arrive in teh mail!

But what are your STAPLES for sugar/white flour free?

TBH, I would LOVE to continue this AFTERwards...so getting a plan NOW will be imperative!

Is whole wheat flour acceptable? If yes, then some whole grain breads would be okay and whole wheat pasta, also. Be sure to read labels. A lot of what is labelled whole wheat is not really whole wheat at all.

For a meal, any meat or fish, a veg, a good salad and if you like a starch with your meal, a potato made some way, brown rice or whole wheat bread. Simple, easy and good.

Lentils make a terrific meal. Do a search for honeybaked lentils and there's a recipe by a mom here on MDC that should pop up. Delish! If you Google it, this recipe will show up, too.

You can check the traditional foods forum, the vegetarian forum, do a search on whole foods diet, low glycemic diet, etc. and that should pull up some possiblities.

Quiche, frittata, omlettes, chef salad, chicken soup ( no noodles) chili, beans and corn tortillas, vegetable or chicken stirfry served over brown rice...this is all I can think of off the top of my head.

P.S. Here it is. Post #54 has the honeybaked lentil recipe. This is a whole thread full of lentil recipes. And maple syrup or molasses can be subbed for the honey, if honey is not okay.

Crustless zucchini quiche

Off the top of my head - this is my current favourite quick meal. It's easy to make, delicious, tastes good hot or cold, is great for lunch or supper or even breakfast...

Preheat oven to 375F/190C.

1 medium zucchini, in one inch/2 cm cubes

2 cups/500 mL cottage cheese

3 eggs, beaten

1 cup/250 mL Cheddar cheese, cubed

3 Tbsp/45 mL melted butter

3 Tbsp/45 mL flour

1 clove garlic

1 tsp/5 mL dried basil

1/2 tsp/2 mL salt

1/4 tsp/1 mL pepper

Grease a pie plate.
In a bowl, combine all of the ingredients. Mix well.
Pour into the pie plate.
Bake for at least 1 hour, until a knife inserted in the middle comes out clean.
