left chicken stock out overnight

eek i left my homemade stock out on the counter over night... would you use it?

No,honestly I really wouldn't. I've had food poisoning before and it is seriously no bueno. It's way better just to go to the store and buy another chicken and boil it again. Better safe than sorry.

I would put it back on the stove, bring it to a simmer for 15 minutes or so and absolutely use it.

I have left stock out for about that long before, reboiled it and used it. Not sure if it was a good idea, just saying what I did! Not sure if it makes a difference but our kitchen was very cold at the time (winter, uninsulated kitchen) so i figured it was about like being in the fridge, maybe not quite as cold.

I think that Jessica Prentice wrote in Full Moon Feast that she takes her stock off the heat for the night when she's making it. Can't remember for sure though....

Thanks for the replies. I put it in the fridge and haven't used it yet... its a beautiful stock, nice and gelatinous. I want to use it so bad! Still cant decide...

I would not use it. The bacteria that cause food poisoning would love to grow in your stock, and reboiling it for how ever long isn't going to neutralize the toxins created by some types of bacteria so you could still get sick. I personally don't like having diarrhea or vomiting so I'd pitch it. As painful as it is to toss what appears to be a perfectly fine pot of stock it just isn't worth the risk to me.

I definitely would not. But I know others do, w/o illness. To me, it's better to be safe than sorry.

I'd probably decide that it was okay and keep it, and then get freaked out every time I thought about using it, and so therefore never eat it. Eventually it would become a science project in the fridge, at which point I would tell DH that he has to deal with it because I'm pregnant and have a high gag reflex.

But that's just me.
