Hi Ladies,

I'm not a vegetarian now but I am really being drawn to it lately. My DH loves meat but I thought at least introducing more veg meals that he would enjoy and see how it goes.

I am looking for easy recipes to cook with a toddler (who loves rice, bananas, eggs, cheese, potatoes). I love colourful foods and right now am loving butternut squash.

I'd also love to keep it inexpensive as we may have to do IVF (but hoping not to) so we need to look at saving our pennies.

Just a quick post, but I'd love ideas, websites, or any other resource I can get my hands on!

Cutting back meat and dairy can be good for fertility so you may be on the right track. My DH and I were eating vegetarian meals about 2-3 times a week for a couple years before we went completely veg. Find some good meals that stick to your ribs and he will be hooked. My DH doesnt miss me cooking with meat at all. He will order omni food at restaraunts but I am ok with that.

you can do sweet potato fries. cut, drizzle w/ olive oil, broil or bake. i also love doing small cubed potatoes and cubed up squash(such as butternut), drizzle w/ olive oil, and broil. i do a salad that has greenleaf lettuce, avocado, and walnuts. soups are really easy: lentil, red lentil(dahl), basic veggie. avocado/guacamole sandwiches, tomato sandwiches. veggie burritos, spaghetti/ or any other pasta. tator-tot casserole: mix vegetarian baked beans, w/ 2 of any other kind of beans, a can of corn, a can of green chili's(i do mild) in a 9x12 baking dish and top w/ tator tots evenly. bake at 400 until tots are cooked. i have a ton because my son's just now 8months old, so i understand the need for speed. i can't think of any more right now. i hope that helps.

Thank you both for your quick responses.

We love sweet potato fries and they are often a snack for DD and I during the day.
